Refreshing Summer Slaw Recipe

Looking for a new summer recipe to help get those vegetables into your diet?  Try this refreshing slaw mix recipe that takes less than 5 minutes and doesn’t require any cooking.  Not only does it taste great, but it’s light on calories and loaded with vitamins and minerals.  In fact, 1 cup has less than 70 calories and has 120% of the daily value for Vitamin C and 35% for Vitamin A.

Try using this as a side dish to replace traditional coleslaw recipes which often range from 200-500 calories per cup.  This slaw recipe also makes a great snack on its own or can be used as a topping on a salad or a sandwich.  You could also turn it into a light summer meal by add some slivered almonds or grilled chicken and putting it in a whole wheat pita or on a whole wheat tortilla.

Ingredients:

  • 1 Bag Broccoli Slaw Mix (12 ounces)
  • 1/3 Cup White Vinegar
  • 1 Tablespoon Olive Oil
  • ¼ Cup Splenda (you could use sugar instead*)
  • 1 teaspoon Celery Seed
  • ½ teaspoon Garlic Powder
  • ½ Teaspoon Salt

Directions

Make the dressing by mixing vinegar, oil, splenda and seasonings together in a small bowl until blended.  Place slaw mix in a mixing bowl and pour dressing over top and stir until coated.  You can eat it immediately or let it chill in refrigerator.  I think it’s best if you let it sit for an hour or two, and it does last for several days if it is kept covered in the refrigerator.

Nutrition Facts: 1 Serving (1 Cup): 67 Calories, 4 grams of fat, 8 grams of carbohydrate, 2 grams fiber and 2 grams of sugar.

*The calories, carbohydrates and sugars would be higher if you use sugar in place of splenda.
